I'm strong to the finish....

I am generally not a healthy eater. Ok, I'd rather live on chocolate and potato chips. But now I have children and I'm over 40, so I try to eat better. One thing we do regularly is baby spinach salad. My friend Kathy shared her wonderful dressing and we just love it. Now, it says it makes 8-10 servings. I try to use about half of a normal serving just because I worked out the calories on it. :) And I like to add extra goodies to it.


Spinach Salad

Kathy's Sweet and Sour Spinach Dressing:

1 cup of oil
3/4 cup of sugar
1/3 cup ketchup
1/4 cup vinegar
2 tsp Worcestershire sauce
1/4 tsp dry mustard

Add all ingredients in a jar with a tight lid and shake well. Refrigerate to blend flavors. Makes enough for 8-10 servings.

Salad
Baby Spinach
Cheese - Any kind will do, or a mix
Nuts - Candied pecans from Trader Joes rock, eat some for me please
Dried fruit - cherries, cranberries, whatever

Portion out the spinach into a large bowl for the number of people consuming. Add enough dressing to lightly coat the spinach. Start light, you can always add more. Top with your choice of toppings.

Boy, is that rough or what???
